That was my experience with rFactor 2 until Build 146. They seem to have nailed it. It runs silky smooth now on my triples with most eye candy set to max. No, they have not. It works for you because you've got a 4GB card. I think those of us that are relying on SLI are being limited to what 1 card is capable of. I my case...1GB. I can not run triples (7FPS). Even single screen, I'm only at 60FPS.....and that is with some of the settings turned down. I'm hoping it will get better once they get SLI support ironed out. Or once I get the new system built over the summer..... But I'm not 100% positive I've got the latest build (I think I do). I'll need to verify.

I think those of us that are relying on SLI are being limited to what 1 card is capable of. rF2 should run just fine in 1GB with maybe a few features turned down. rF1 never passes 600 MB with triples on my system. Optimization is certainly needed for SLI though. Once we get that, you should see quite a jump in performance.

When I get home I'll grab a screenshot of my gfx configuration.
You should be doing better than 7 fps on triples. I was getting better than that with my SLI'd GTX275 896 MB cards in the older crappy builds. Of course, as the field sizes increase, framerate will suffer but if you were getting 7 fps driving solo then something is not right.
If you have the environmental reflections on then turn those off, they're a major framerate killer. I'd also kill the weather effects and wind animations for now.

I ran it on 3 screens with a 5870 1 GB card. I had to turn most settings to medium and not use shadows. Make sure the options in the lower left like Sun Occlusion and rain effects are off too. Even if it's not raining, they kill frames.
Oh and turn HDR off. Also uncheck multi-monitor in the config screen and try a lower AA setting like 1 or 2.

Yeah, when I had SLI'd 560tis, I had a devil of a time getting decent FPS with triple screen resolutions in rFactor 2. But, that was with far earlier builds that ran more poorly than Build 146. In some games, even with my 4 GB 670, I cannot get playable resolutions at 5760 X 1200. Far Cry 3 is a good example. Different games work differently at triple screen resolutions. It could be that rFactor 2 will never work well with your SLI'd cards at triple screen resolutions with high or max eye candy. That is part of the downside of using newer sims, they need more power.
