Just installed it and am trying it out as we speak. Here are some prelim reports of frame rates I'm getting in Triple Screen at 5760 x 1080.
Iracing - max settings in practice - avg 110 fps
PCars max settings in DX11 in practice - avg 50 fps With 10 cars on the grid - avg around 35 fps

Id be interested if you get any stutters at Suzuka full in iRacing. That track has issues with draw distance I think

I don't believe I have track. I ran Lime Rock on my quick test. rFactor 2 still has poor performance though, but that is clearly a software issue not hardware.

if you happen to drive Okayama (thats a free one i think) it also stutters. Usually at that tight corner before you start downhill towards the finish straight.

I'm sure my processor is the source of my bottle neck. I have a AMD Quad Core 9950 which is around 5 years old.
I'll play around with it more this weekend and report back.
pCARS does look awesome though. I turned down the settings from Ultra to High with shadows and reflections set to medium and with 10 cars on the grid it up'd my FPS to around 40.
For whatever reason, not seeing a huge difference in FPS in rFactor. Guessing the game may not take full advantage of what the card has to offer.

rFactor is an odd duck. I rarely see more than 35% CPU usage (fullproc and highprio on my quad core i7 920). Overclocking from 2.67 GHz to 4 GHz doesn't result in any framerate change (despite what I told Kelly... I was changing a lot of settings that night).
I think 250-ish fps in triple monitor (750-ish in single monitor) is maybe as high as this sim will scale?
About the only increase in framerate I've gotten recently is with Disable Desktop Composition in the Compatibility tab.

I think the most attractive aspect is the price point. $100 less for the 680 vs the 7970 and depending on the game, flip a coin as to which card is giving better performance. The one thing that caught my eye in that SLI review was that the 680 SLI on F1 2011 totally tanked and tanked HARD. I'm curious as to why that was.

Max visuals (DX10). and it's ~25 fps with no other cars around me. I didn't even try a grid of cars, it'd be undrivable at those settings for me.

For further comparison, using a Core i5 2500k and dual 560tis,
iRacing 50-110 FPS 5760 X 1080, with a few settings turned down from max
Project CARS, I get 30-35 FPS at 5760 X 1080 with medium eye candy and DX 11. Having cars on grid doesn't materially affect FPS, probably because of SLI.
rFactor - 200-250 FPS at 5760 X 1080 at max settings

Well, I caved. After 5 years with the same basic PC (aside from upgrading the video card and the power supply), I decided to upgrade.
I purchased all of the components and built it myself (first time I've tried this - I'm now officially a "geek"). Went with with Intel i5 2500k processor, ASUS Maximus IV Gene-Z motherboard, CORSAIR Vengeance 16 gb RAM and the Antec Eleven Hundred full case. I used my existing power supply and hard drive to save a few bucks. Also ended up having to buy a new DVD reader/writer as my old one wasn't compatible with the motherboard (that's how old my stuff is).
To my surprise, it booted up and seems to be working well.

Very nice, That should boost your performance a bit, even in a night race with headlights going. And that case is very well ventilated, even has a back board fan space if memory serves to keep the processor area cooled from under the Mobo. Nice purchase their.

Thanks. Its amazingly quiet to. Came with a back fan pushing air in and an exhaust fan on top blowing it out.
Dumb question from a newb pc builder here - when I install additional fans on the sides, should they also be pushing air into the case?

By the way, pCars is running smooth as butta so far on triples with or without other cars on track. I think I may be keeping the gtx 680 and selling my 560ti oc2. Still debating though.
